The pick should come to rest on top of the string directly beneath the one being picked. It you are picking the G string, the pick should come to rest on the B string. Picking "through" the string will help the string vibration pattern be at it's best, that's how you get the best tone. You don't want your pick to swing out. Your tone will suffer.
